Salad dressings were opened this week and were dated during this inspection. Refrigerated ready-to-eat, time/temperature control for safety food prepared in the food facility (sliced deli meats, chili) and held for more than 24 hours, located in the walk-in refrigerator, is not being date marked. Sliced deli meats and chili were prepared yesterday and were dated during this inspection. Lid of chest freezer is cracked and/or repaired with materials (duct tape) unapproved for food equipment. The deli slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. The slicer was cleaned during this inspection. The interior of the back microwave oven, a food contact surface, was observed to have food residue and was not clean to sight and touch. The microwave was cleaned during this inspection. Non-food contact surfaces (fan guards in walk-in cooler) not cleaned at a frequency to preclude accumulation of dirt and soil. Insect control devices (fly strips) located in throughout the kitchen area with potential to contaminate food, equipment, and/or utensils. The fly strips were removed during this inspection.

Violations: Food dispensing utensil in food observed stored in the food and not with handle above the top of the food. Observed food stored directly on the floor in walk in freezer area, rather than 6 inches off of the floor as required.

Finch Hill Restaurant & Dairy Bar, 393 Route 247 Greenfield Township, Sept. 15. Regular inspection; in compliance. Violations: Observed tomato sauce being cooled in large 5 gallon plastic container filled to the top which is not a proper cooling method. Manual ware-washing equipment in the ice cream side has a grease buildup residue . Corrected on site. Floor in the ice cream area is made of tile several are cracked/rough and is not a smooth, easily cleanable surface. Floor beneath shelving in the ice cream ware-washing area of the food facility is dirty, dusty, and in need of cleaning.

Fu Da Chinese Restaurant, 480 Daleville Highway, STE 1, Covington Township, Sept. 15. Regular inspection; in compliance. Violations: An open employee’s beverage container was observed on the prep table adjacent to the Pepsi refrigerator. The container was removed from the table. Food employees observed in the kitchen, not wearing proper hair restraints, such as nets or hats. Hats were donned. Food ingredient storage containers, in the kitchen, are not labeled with the common name of the food. The containers were labeled. A bottle of apple juice and a plastic container are stored in the ice in the soda dispenser bin in the waitress area. The bottle and container were removed from the ice. Cleaver stored between the prep table and baine marie, adjacent to the Pepsi refrigerator. The cleaver was removed and placed at the dishwasher. Personal food items are stored on the food storage shelf by the Maxx Cold 2-door refrigerator. The personal items were removed from the shelf. Bags and boxes of vegetables, food containers are stored on the floor, and not on shelves or palettes, in the walk-in cooler. Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability.
