The following are recent Lackawanna County restaurant inspection reports from the Pennsylvania Department of Agriculture. Trac 6, 511 Main St., Carbondale, Oct. 09. Change of Owner inspection; in compliance. Violations: Food facility does not have available sanitizer test strips or test kit to determine appropriate chlorine sanitizer concentration. Food Facility is not using an approved detergent-sanitizer in both compartments of the two compartment manual ware-washing equipment. Ware washing sink counter top a non-food contact surface was not cleaned at a frequency to preclude accumulation of dirt and soil.

Family Dollar #8093, 1437 Main St. Ste. 2, Peckville, Oct 13. Regular inspection; in compliance.

Karp’s Grill, 51 Dennis Road., Scott Township, Oct. 13. Regular inspection; in compliance. Violations: Commercially processed refrigerated, ready-to-eat (salad dressings), time/temperature control for safety food, located in the bain marie, and held more than 24 hours, is not being marked with the date it was opened. Dressings were date marked during this inspection. Refrigerated ready-to-eat (deli meats), time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the bain marie, is not being date marked. Deli meats were date marked during this inspection. Food facility has an employee who held a Certified Food Manager certificate; however, the certificate has expired and is no longer valid. An employee has taken a class but has not received certificate. Information was provided to the person in charge to email a copy of certificate to this inspector. Food employees observed in prep area, not wearing a proper hair restraint, such as a net or hat. Observed a half gallon of 2% reduced fat milk with a use by date of Oct. 1, 2015 in the reach-in cooler. The milk was voluntarily discarded during this inspection. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration Non-food contact surfaces (the interior of the Tradewinds reach-in cooler) not cleaned at a frequency to preclude accumulation of dirt and soil. Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. Information was provided to the person in charge to email results to this inspector.

Violations: Temperature measuring strips were not available to measure the temperature of the mechanical ware washer. Rodent control devices located in dry storage area are not designed to retain the rodents in the device.

Old Forge Jr. Sr. High School/Elementary School, 300 Marion St., Old Forge, Oct. 15. Regular inspection; in compliance. Violations: Food employee observed in prep area, wearing bracelet and watch on arms. Mechanical ware-washing equipment observed with build-up of filth and food residue inside. Fan guards in walk-in coolers have an accumulation of dust, on non-food contact surfaces. Paper towel dispenser empty at the hand-wash sink in the prep area. Paper towel was replaced during this inspection.

Larussa Italian Café, 590 Burke By-Pass, Olyphant, Oct. 16. Opening inspection; in compliance. Violation: Women’s toilet and employee unisex toilet rooms are not provided with a covered waste receptacle for sanitary napkins.

Ritter’s Cider Mill Stand, 117 Wimmers Road, Jefferson Twp, Oct. 17. Regular inspection; in compliance. Violations: Excessive chlorine sanitizer in the spray bottle. The bottle was removed from the stand and replaced with a spray bottle of 200 ppm QA sanitizer. Food employees observed in food stand, not wearing proper hair restraints, such as nets or hats. Hats were donned. Temperature measuring device for ensuring proper temperature of equipment is not available in the freezer. A thermometer was placed in the freezer.

Moscow Deli & Food Mart, 206 S. Main St., Moscow, Oct. 19. Regular inspection; out of compliance. Violations: A spray bottle of purple liquid, on the self-service counter, is not labeled. The bottle was labeled.The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed food employee doning gloves, for food prep, without washing his hands and after handling money. The employee removed the gloves and discontinued food prep, however, he did not wash his hands. Food employees observed in prep/cook area, not wearing proper hair restraints, such as nets, hats, or beard covers. Temperature measuring device for ensuring proper temperature of equipment is not available in the baine marie. Thermometers for ensuring proper temperatures of food are not available. Food facility does not have available chlorine sanitizer test strips or test kit to determine appropriate sanitizer concentration. Dirt/scum in the equipment sink bays. Sink stopper missing for the equipment sink. Old food residue on knives on the magnetic holder above the baine marie in the prep area. Knives placed at the equipment sink for cleaning. Ice build up on the walls in the reach-in ice cream freezer on the retail floor. Ice build up on the walls and rim of the chest freezer in the back area. Ice on the rim is preventing the lid from sealing. The gasket on the lid is ripped and hanging. Effective sanitizer is not available. Unscented chlorine bleach was made available. As per the person in charge, food contact surfaces are washed and rinsed and not sanitized, shall wash-rinse-sanitize (use a capful of unscented bleach in a gallon of water)-air dry food contact surfaces. Lack of a back flow prevention device on the water line at the side of the equipment sink. A hose is connected and lying in the sink creating a potential cross connection. The hose was removed from the sink. Lights are not shielded or shatter proof over the equipment sink. No sign or poster posted at the hand-wash sink in the restroom to remind food employees to wash their hands. A sign was provided for posting. Paper towel dispenser empty at the hand-wash sink in the prep and self-service counter areas. Paper towels were placed at the sinks. Soap was not available at the hand-wash sink at the self-service counter. Soap was placed at the sink. Old food residue on the cook line floor and on the adjacent table shelf. Floor storage of boxes, crates, soda cases and miscellaneous items in the back area.
