Violations: The food facility does not have the original certificate for the certified food employee posted in public view. An employee has taken a Serv Safe class and is awaiting test results. Owner to email a copy of certificate to this inspector once certificate is received.

Violations: Working container in ware wash area, used for storing chemicals taken from bulk supplies, was not marked with the common name of the chemical. The chemical was labeled during this inspection. Observed the lid of a chest freezer being held together with duct tape. No sign or poster posted at the hand wash sink in the prep area to remind food employees to wash their hands. A sign was posted during this inspection. Observed chipping paint on the wall near the ware wash sink.

West Scranton Intermediate School, Fellows Street and Parrott Avenue, Scranton, Dec. 1. Regular inspection; in compliance. Violations: Mechanical ware washing equipment had a calcium buildup observed inside. Observed stand fan, in kitchen area, with an accumulation of dust. Exit door located in the bakery area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Approximately a dozen rodent droppings observed under lower shelf in dry storage area. Potential rodent harbored areas on the exterior of the building perimeter observed around the loading dock.

Food dispensing utensil in sugar observed stored in the food and not with handle above the top of the food and the container. Observed food stored directly on the floor in walk in refrigerator area, rather than 6 inches off of the floor as required.

Reviewed acceptable options for storing utensils with person in charge for corrective action. Observed in-use knives and /or cleavers stored between table edges or between tables, an area not easily cleanable & sanitized. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in refrigerator. Observed deeply scored cutting boards not resurfaced or discarded as required. Can opener had old dried residue on the blade. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed clean food equipment and/or utensils in kitchen area, stored uncovered or not inverted. Plumbing system not maintained in good repair – observed water leaking at the three compartment sink. Right faucet is broken on the wash sink. Toilet rooms do not have a self-closing door.

Violations: Food facility has an employee who held a Certified Food Manager certificate; however, the certificate has expired on 6/15/1215 and is no longer valid. Provided the owner with a list of courses.Observed in-use knives and /or cleavers stored between table edges or between tables, an area not easily cleanable & sanitized. The knives were removed during this inspection. Fish and shellfish are served raw or under cooked to the customer’s request; however, a written consumer advisory (on the menu, table tent, or placard) is not provided to the consumer. An advisory was posted during this inspection. Hood filters have an accumulation of grease. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

Manhattan Manor, 8 Salem Ave., Carbondale, Dec. 1., Regular inspection; in compliance. Violations: Working containers of chemical cleaner/sanitizer were stored above or on the same shelf with food, equipment, and utensils in the kitchen area. Corrected on site. Observed six individual packages of cryo-freeze tuna steak completely unthawed in the baine marie refrigerated unit. Reviewed manufacturers instructions for thawing product. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the walk-in cooler equipment. Observed refrigerated equipment, in kitchen area, with an accumulation of food spillage residue, debris on non-food contact surfaces. Floor surfaces beneath the mechanical dish washer area in the food facility is dirty and in need of cleaning.

Violations: Non-food contact surfaces (fans in dish wash area) not cleaned at a frequency to preclude accumulation of dust. Ice build up observed in the back area of walk-in freezer near fans/compressor, ceiling and floor. Staff to move boxes of food away from affected areas.
